I’ve been hunting and fishing for a long time and I’ve tried many knifes…The one I’ve come down to is made by Victorianox , the true swiss army knife . They have lots of choices and you can decide what you require….
For a good fishing knife that can do double duty as a hunting knife and is a folder as you specified, take a look at the Case brand folding knife that I have a link to below. It also has a hook sharpener, fish scaler and hook remover in addition to the regular blade. Case makes high quality knives and it falls within your specified budget.
I have a Gerber folding knife with assisted opening. It has a spring that helps you open it one handed, so if your fishing you can do open the knife with one hand and hold your line or rod in the other. I will never own another pocket knife without that feature.
