A three inch blade is fine, provided it is sharp, you have a way to resharpen it should it dull before you finish, and you have a good bone saw.

Always carry a couple of good strong sharp knives and a stone to sharpen.

You don’t need a larger knife but I would suggest you have at least two knives and a small hatchet/saw available for the job. Skinning then quartering an elk is a lot of cutting around bone and tends to dull a blade fairly well.

Rather then some huge beast fo a knife you’re really better off having a smallish knife and then a hatchet or small saw to do the heavy work of spliting the hips and backbone when quartering.
