    You would cook the fish and then the skin should some loosen and you can just peel it off with your fingers and pick the meat off and eat it.

    you can gut it and scrape the scales off of it with the same survival knife then cook it. if you’re in a survival situation with no utensils, just throw the fish whole, on a bed of coals and when it’s charred, the skin will peel off easily then pull the head off and most of the innards will follow it out. but if you’re REALLY hungry, the head and innards have some tasty parts too. especially the cheeks. it would probably be easier to keep a few hooks and a bit of line in your survival kit along with your knife.

    Why waste energy skinning it? leave the skin on, you simply need to remove the guts, and cut it into fillets, remove any fins and place it on the fire, i don’t suggest eating any of the innards, when you gut it ensure you don’t cut into any of the organs.
    Wash it in some moving fresh water, such as a river, then place the fillets on a stick with the bark(bark holds bacteria so its best removed) removed and cook over the fire.

    Other items to include in your survival kit;
    Magnesium alloy fire-starter
    Lighter(butane, high pressure works like a mini blowtorch, will even light wet kindling)
    Fishing hooks(size 1, and 2/0)
    Fishing Line, 50m, clear, 18lb test
    Parachute cord.

    If you have salt, you can cover the skin with it, scales and all, I mean cover it, as much as can stick on. Cook the fish, preferably wrapped in tin foil or leaves, the skin will harden and come off the fish like a body cast and the fish meat will be tasty and not salty at all.
